Where To Use This

– This one is a showstopper: Get some lamb chops and give it beans with the seasoning before finishing it under a hot grill or BBQ with apricot jam or mango chutney as a glaze. Heaven.

– Lamb again, but slower. Do the same as above but low and slow with a big joint like lamb shoulder or lamb leg. Heaven again.

– Did we mention you can use it on other stuff, not just lamb? Yep, put it on/in roasted vegetables, pasta salad, salmon, roast potatoes, pot noodles, macaroni cheese, steak, beef, stew? whatever. Get the idea?

    This has quickly become one of my favourite spice blends. It wasn’t a combination I’d knowingly tried before; but I’ve only scratched the surface of South African cooking.
    The Cape Malay has a blend of spices that take you to a melting pot of cultures somewhere hot. They’re all quite earthy & manage to play hide & seek in your mouth. They seem to line up behind the dominant fennel and fenugreek; peeking out & ducking back in again before you can quite place them. A very clever mix.
    They love fat to make them all really sing clearly though. So succulent lamb/hogget/mutton is a real given. Oily fish like mackerel, trout or salmon are also great. Other fatty foods like cheese or good sauces are elevated with it too.
    Think my favourite plate with it so far were some bone in [with marrow] hogget gigot chops, with macaroni cheese & ghee sautéed fava beans. The spice ran through it all & was very good
    Very much worth a place in your spice cabinet.
