Serves: 4
Prep Time: 15 mins
Cook Time: 60 mins
Total Time: 1 hour 15 mins
Ingredients:
- 1 whole chicken (approximately 1.5 kg)
- 2 tbsp of Coffee Shot Seasoning Blend
- 2 tbsp olive oil
- 1 lemon, halved
- 4 garlic cloves, unpeeled and smashed
- Fresh thyme, a few sprigs (optional)
Method:
- Preheat your oven to 230°C (fan-assisted). While it heats, pat the chicken dry with kitchen paper to ensure the skin crisps up nicely.
- Rub the chicken all over with olive oil, then generously apply the Coffee Shot Seasoning Blend, making sure it is evenly coated for maximum flavour. Season the inside of the chicken as well, and stuff it with lemon halves, garlic cloves, and a few sprigs of thyme, if using.
- Place the chicken breast-side up in a roasting tin. Roast in the preheated oven for about 60 minutes or until the juices run clear when the thigh is pierced with a skewer.
- Allow the chicken to rest for at least 10 minutes after removing it from the oven. This will make a massive difference to the juiciness levels – don’t skip it!
To Serve: Slice the chicken and arrange it on your best serving platter. Drizzle with the juices collected in the roasting tin and squeeze the roasted lemon over the top for an added mouth-puckering goodness. Garnish with additional fresh thyme. This dish pairs wonderfully with roasted potatoes or a crisp green salad to keep the meal light and allow the unique flavours of the seasoning to shine through.

3. Coffee-Crusted BBQ Pork Tenderloin
If you’re bored of boring old pork tenderloin, you really, really need this. This recipe, perfect for any family or entertaining session, combines the deep, smoky flavours of roasted coffee with the natural sweetness of pork, all grilled to perfection.
Serves: 4
Prep Time: 15 mins
Cook Time: 30 mins
Total Time: 45 mins
Ingredients:
- 2 pork tenderloins (about 500g each)
- 4 tbsp of Coffee Shot Seasoning Blend
- 2 tbsp olive oil
- 1 tbsp Worcestershire sauce
- Fresh coriander or parsley, chopped (for garnish)
Method:
- Start by trimming the pork tenderloins of any silverskin or gnarly bits. In a small bowl, mix the olive oil, Worcestershire sauce and the Coffee Shot Seasoning Blend to create a marinade.
- Rub the marinade thoroughly over the pork tenderloins, ensuring they are well coated. Let the meat marinate for at least 15 minutes to absorb the flavours, or ideally, refrigerate for a couple of hours or even overnight.
- Preheat your BBQ to a medium-high heat (around 200°C). Place the tenderloins on the grill and cook for about 15 minutes on each side, turning occasionally, until the meat is beautifully charred and cooked through. For the very best tenderloins you’ve ever had, remove them when they reach 55°C and still blushing inside.
- Remove the pork from the BBQ and let it rest for 10 minutes.
To Serve: Slice the pork tenderloin into thick medallions. Arrange on a platter, sprinkle with some sea salt flakes and scatter over a bit of fresh chopped coriander or parsley, and serve alongside grilled vegetables or a crisp salad. Crack open a cold beer or a light red wine and you’re sorted.

Ingredients:
- 8 beef short ribs (about 1.5 kg)
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 250 ml red wine

- 3 tbsp tomato purée
- 8 tbsp Coffee Shot Seasoning Blend
- 2 bay leaves
- Fresh thyme, a few sprigs

Method:
- Preheat your oven to 160°C. Season the beef short ribs generously with salt, pepper, and 2 tbsp of the Coffee Shot Seasoning Blend, ensuring they are evenly coated.

- In the same pan, reduce the heat to medium. Add the onion, garlic, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
- Stir in the tomato purée and cook for another 2 minutes. Pour in the red wine, scraping any browned bits off the bottom of the pan. Allow to simmer and reduce slightly, about 5 minutes.
- Return the ribs to the pan. Add the beef stock, remaining 6 tbsp of Coffee Shot Seasoning Blend, bay leaves, and thyme. Bring to a simmer, then cover and transfer to the oven.
- Braise in the oven for up to four hours hours, or until the meat is tender and falling off the bone.
To Serve:
Transfer the ribs onto a serving platter. Skim any excess fat from the surface of the sauce and adjust the seasoning with salt and pepper if needed. Spoon the rich, aromatic sauce over the ribs. Garnish with a sprinkle of fresh thyme leaves. Serve with creamy mashed potatoes and steamed green beans for and epic feast.
