Heyyy there folks, we’ve been a bit quiet of late but we’ve been cooking up something we’re a bit pleased with.
We’ve got a huge raft of new products to roll out this year, and first of all on the menu is a brand new pair: King Creole Seasoning and Punch Ya Papa Cajun Seasoning.
It’s been quite the journey into researching the best and boldest way to make these, and we’ve gone deep into Louisiana’s rich culinary and cultural history book to bring you some epic flavours from the land of alligators, crawfish, Rougarou and Feu Follet.
Keep watching, over the next couple of weeks we’ll be running some giveaways (including new sweet, sweet merch) and some subscriber-exclusive pre-launch discounts.
So, what is Cajun and Creole cuisine anyway?
Louisiana’s food scene is an eclectic melting pot of different cultures, each one contributing to the state’s unique food flavour. Cajun and Creole are the jewels in Louisiana’s crown, each one with quite a colourful story!
Cajun cuisine’s starts with the Acadian (French descendent) people, exiled from Canada, who settled in the sticks in Louisiana. They were a pretty resourceful gang, as most exiles are, and made the most of the local resources. They adapted their rustic French cooking to the new land they found themselves in. This led to Cajun cuisine – bold spices, deep flavours and hearty meals that could sustain even the hangriest of workers.
Creole cuisine, on the other hand, has rather more boujee roots and comes from the New Orleans – The Big Easy – where a blend of French, Spanish, African, and Native American influences all got together for a happy party. The result is a wider range of ingredients and spices, giving a much more complex flavours that are as varied as the characters that live in the Gumbo City.
Aaaand, this is what we’ve got:
Punch Ya Papa Cajun Seasoning
It’s a fiery blend that packs a serious punch and captures the spirit of Louisiana’s countryside, with a top-secret (heh heh) blend of spices including cayenne pepper, garlic powder, paprika, thyme and loads of other exciting shiz. It’ll give a decent kick to your food, perfect for if you’re not a wimp when it comes to a bit of heat.
King (Tasty) Creole Seasoning
A carefully blended and craftily created mix that balances heat and aromatics. What’s in this one? Top secret, as before, but it does have onion, garlic, paprika, chilli and a bunch of other herbs and spices. It’s versatile and flavourful, and will make pretty much any dish sing.
