Our top tips, taken from this video:

  • Build dishes around one main protein

  • Balance flavours: acid vs fat, salt vs sweet, crunch for contrast

  • Use proven pairings (e.g. pork–apple–fennel, beef–beetroot, fish–fennel, pork–stone fruit)

  • Layer flavours by using the same ingredient in multiple ways (e.g. raw apple, braised apple, apple vinegar)

  • Combine textures: crunchy with soft for harmony

  • Think about layering at every stage to achieve a complete, balanced plate
